One-Pot Alfredo Mac and Cheese
- 8 ounces, fluid Mezzi Rigatoni Pasta
- 4 cups Milk
- 1/2 teaspoons Kosher Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 1/2 teaspoons Dry Minced Onion
- 1 pinch Freshly Grated Nutmeg
- 1/4 cups Cream Cheese, Room Temperature
- 1 Tablespoon Butter
- 3 cups Freshly Grated Grand Cru Surchoix Cheese, Or A Blend Of Parmesan And Swiss Cheeses
- In a large saucepan, bring pasta, milk, salt, pepper, minced onion, and nutmeg to a boil over high heat.
- When the mixture begins to boil, reduce the heat to medium.
- Stir often, until pasta is cooked to your liking.
- This should take anywhere between 14 and 20 minutes.
- Turn heat off and stir in cream cheese and butter, until thoroughly incorporated.
- Stir in cheese until it is completely melted.
- Serve immediately.
