Salmon Patties (croquette style)
- 1/4 cup Canola Oil
- 1 15 oz. can Pink Salmon (Wild Caught!!)
- 1/2 cup minced Onion
- 1/2 cup minced Celery
- 1/3 cup minced Pepper
- 1/2 cup Italian Bread Crumbs
- 2 large Eggs
- 3 tbl. Mayo
- 2 tsp. Lemon Juice
- 1 tbs. Parsley
- 1/2 tsp. each Salt and Pepper
- Heat oil in frypan on med.high heat.
- Remove large bones and skin from Salmon.
- Mix rest of ingredients into fish.
- Mixture will be wet.
- Fry about 5 min.
- each side, until browned.
- Drain on towels.
