Fish Zip Packs
- 4 each (6 to 8 ounce) fish filet ( I have used cod or tilapia, but you can use your favorite here)
- 2 cup fresh or frozen (thawed) veggies, sliced or chopped (I usually use broccoli, potatoes, zucchini, and/or carrots)
- 2 tbsp olive oil
- 1 tsp lemon pepper
- 4 pats of butter (about 2 teaspoons each)
- 4 garlic cloves, crushed
- 4 lemon slices
- In a bowl, combine the veggies, oil and lemon pepper.
- Mix well.
- Cut 4 sheets of foil, about 15 inches long.
- Divide the veggies among the pieces of foil.
- Place a fish filet on top of the veggies.
- Sprinkle with lemon pepper.
- Place a pat of butter on top of each fish filet.
- Top with 1 crushed garlic clove per filet and finish by putting a slice of lemon on top of each filet.
- Bring the sides of the foil together and roll, "tenting" up the foil.
- Leave room for steam inside the "tent".
- Grill over medium heat/flames for 10 to 20 minutes depending on the thickness of your fish and how hot your grill is.
- You can serve these right in the packets, but make sure everyone is careful when opening the packs because of the steam.
- *You can also bake these in a 375F oven for 15 to 25 minutes.
