Somen Noodles with Lots of Vegetables and Leek Sauce
- 80 to 100 grams Somen noodles
- 1/2 Cucumber
- 1 the same amount as the cucumber Carrot
- 1 the same amount as the cucumber Mizuna greens
- 1 the same amount as the cucumber Cabbage
- 1 Myoga ginger
- 1 Daikon radish sprouts
- 3 stick Imitation crab sticks
- 2 tbsp Japanese leek (finely chopped)
- 1 1/2 to 2 tablespoons Mentsuyu or soy sauce
- 1 tbsp Sesame oil
- 1 Ra-yu, chunky ra-yu, vinegar
- Finely julienne or slice the vegetables.
- Shred the crab sticks.
- Cook the somen noodles following the package instructions, drain and rinse under cold running water until any stickiness is gone.
- Drain well and sprinkle with a little sesame oil (not included in the ingredient list).
- Put the mentsuyu sauce or soy sauce in a heatproof container.
- Heat the 1 tablespoon of sesame oil in a frying pan and stir fry the leek.
- Add this to the heatproof container and mix to make the leek sauce.
- Put the somen noodles on a serving plate.
- Arrange the vegetables and crab stick on top, and pour on the leek sauce.
- Add some ra-yu, vinegar, chunky "eating ra-yu" etc.
- to taste and enjoy.
