Asparagus Guacamole Recipe
- 1 lb Cut, trimmed, fresh asparagus or possibly
- 2 pkt (10 ounce. each) frzn, cut asparagus
- 1 sm Garlic clove, chopped
- 2 tsp Lime juice
- 1/4 c. Canned, minced green chilies
- 1/2 tsp Salt
- 1/2 tsp Cumin
- 2 Tbsp. Finely minced onion
- 1/2 c. Minced, seeded tomato
- 1.
- Cook asparagus in small amount of water till tender.
- Drain well and cold thoroughly.
- 2.
- In food processor or possibly blender, process asparagus and next five ingredients till mix is smooth, about 30 seconds.
- Scrape bowl frequently.
- Remove from food processor bowl and stir in onion and tomato.
- Refrigeratethoroughly before serving with tortilla chips, cut
- yield : 2 c.
