Lori's Thai Cantaloupe Soup

  1. Halve cantaloupe.
  2. Scoop out seeds.
  3. Remove flesh, reserving shells for "bowls".
  4. Heat oil in a saucepan.
  5. Add onion.
  6. Saute 2 minutes.
  7. Add tomatoes and the cantaloupe.
  8. Saute 5 minutes.
  9. Add the water, sugar, cayenne and nuoc nam.
  10. Simmer 5 minutes.
  11. Puree.
  12. Return to pot.
  13. Re-heat.
  14. Top with the green onion, peanuts and cilantro, to taste.
  15. YUM!
