Vegetarian Corn Chowder
- 3 large potatoes
- 1 medium onion
- 4 medium carrots
- 3 can creamed corn
- 1 can condensed milk
- 1 stick margarine
- 5 tbsp parsley
- 1 salt
- 1 pepper
- Dice or chop potatoes and onion, and grate the carrots.
- Put potatoes and onion in a small amount of water and boil for a few minutes, then add carrots (they don't need as long or they will get too soft).
- After the vegetables are cooked enough, add the corn, parsley, and margarine.
- Add salt and pepper (we like a lot of pepper) to taste.
- Add condensed milk to a soupy consistency.
- Could be anywhere between half to the entire can.
- Simmer everything for 15 minutes.
