Quick Chocolate Fudge(Microwave)
- 1 lb. box powdered sugar
- 1 c. unsweetened cocoa
- 1/2 c. (1 cube) butter or margarine
- 1/2 c. half and half light cream
- 2 tsp. vanilla
- 3/4 c. coarsely chopped nuts
- Lightly grease an 8 x 11-inch pan and set aside.
- In a 1-quart bowl, combine sugar and cocoa.
- Cut butter into small pieces and dot over sugar mixture.
- Stir in half and half and vanilla.
- Cover with wax paper.
- Microwave on High for 2 minutes.
- Add butter; using a wooden spoon stir hot mixture until butter melts.
- Beat vigorously for 1 minute until mixture loses its gloss.
- Stir in 1/2 cup nuts.
- Pour fudge into prepared greased dish and spread it evenly.
- Sprinkle with remaining 1/4 cup nuts, lightly pressing them into fudge.
- Refrigerate, uncovered, for 1 to 2 hours or until firm.
- Cut into squares.
- Store in tins or covered dish in refrigerator.
- Makes about 1 pound.
