Quick Chocolate Fudge(Microwave)

  1. Lightly grease an 8 x 11-inch pan and set aside.
  2. In a 1-quart bowl, combine sugar and cocoa.
  3. Cut butter into small pieces and dot over sugar mixture.
  4. Stir in half and half and vanilla.
  5. Cover with wax paper.
  6. Microwave on High for 2 minutes.
  7. Add butter; using a wooden spoon stir hot mixture until butter melts.
  8. Beat vigorously for 1 minute until mixture loses its gloss.
  9. Stir in 1/2 cup nuts.
  10. Pour fudge into prepared greased dish and spread it evenly.
  11. Sprinkle with remaining 1/4 cup nuts, lightly pressing them into fudge.
  12. Refrigerate, uncovered, for 1 to 2 hours or until firm.
  13. Cut into squares.
  14. Store in tins or covered dish in refrigerator.
  15. Makes about 1 pound.
