Sausage and Bean Soup

  1. In a large saucepan, cook bacon over medium heat until crisp.
  2. Using a slotted spoon, remove to paper towels to drain.
  3. Saute onion in drippings until tender.
  4. Stir in carrots and potatoes; cook for 2 minutes.
  5. Add water; bring to a boil.
  6. Reduce heat; cover and simmer for 9-12 minutes or until vegetables are tender.
  7. Stir in the sausage, green beans, cannelini beans, parsley, salt, pepper and marjoram; heat through.
  8. Sprinkle with reserved bacon.
