Chicken Satay with Rice

  1. Prepare rice according to manufacturers instructions.
  2. Skewer strips of chicken on bamboo or metal skewers.
  3. Season with salt and pepper.
  4. Heat oil in a large skillet or grill pan over medium heat.
  5. Add chicken skewers and cook 5 to 7 minutes, until golden brown and cooked through, turning frequently.
  6. Meanwhile, in a small saucepan, combine peanut sauce, hoisin sauce, and hot sauce.
  7. Set pan over medium-high heat and bring to a simmer.
  8. Simmer 5 to 7 minutes, until sauce reduces slightly.
  9. Serve chicken with peanut sauce on the side for dipping and brown rice.
