Warm potato and chard salad

  1. First boil the potatoes.
  2. I added some dry thyme to the water.
  3. Once boiled, let them cool and slice them.
  4. While the potatoes boil prepare the vegetables.
  5. Cut the onion.
  6. (You may sub.
  7. with shallot or scallions.)
  8. Then dice the pepper.
  9. Mince the garlic and prepare the chard.
  10. (I found time to take all these photos :))
  11. In a pan heat the evoo with the hot pepper flakes in it.
  12. Then add the potatoes.
  13. Let them brown a little, 6-8 minutes.
  14. Then add the pepper and the chard stems.
  15. Let them sweat for 5-6 minutes.
  16. Afterwards, add the chard leaves, spring onion and garlic.
  17. After 1 min.
  18. add the wine.
  19. Salt and pepper to taste.
  20. Place on a plate.
  21. Garnish with parsley, parmiggiano and linseeds.
  22. Enjoy!
