Sofrito Chicken
- 1/4 cup KRAFT Zesty Italian Dressing
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tsp. ground annatto
- 1 medium green pepper, chopped
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 3 oz. OSCAR MAYER Ham, any variety, finely chopped
- 1 cup chopped cilantro
- 6 small boneless skinless chicken breasts (1-1/2 lb.)
- Heat dressing, onions, garlic and annatto in large skillet on medium-high heat 2 min.
- Add peppers, tomatoes, ham and cilantro; cook 5 min., stirring constantly.
- Reduce heat to medium.
- Place chicken on tomato mixture; press lightly.
- Cook 10 min.
- Carefully turn chicken over so that tomato mixture sticks to chicken; cover.
- Cook 15 min.
- or until chicken is cooked through (170F).
