Baily's Irish Cream Cheesecake Recipe
- 1 1/2 pkt Graham crackers, crushed
- 6 x Butter, melted
- 1/3 c. Sugar
- 24 ounce Cream cheese, unwrapped And softened in a microwave On high
- 5 x Jumbo Large eggs separated
- 1 1/2 c. Sugar
- 2 env knox gelatin
- 3 Tbsp. Cocoa
- 1/2 c. Bailey's irish cream
- 1 pt whipping cream
- Soften gelatin in small saucepan with 3/4 c. water.
- Stir egg yolks into 1 c. sugar.
- Add in to gelatin mix and cook over med.
- heat.
- stirring constantly till mix thickens and bubbles.
- Cold.
- Beat cheese in large bowl till light and fluffy.
- Add in cocoa and beat again.
- Add in Bailey's and beat some more.
- Slowly add in gelatin mix an blend well.
- Beat egg whites till soft peaks form.
- Add in remaining 1/2 c. sugar and continue beating till stiff peaks form.
- Fold into cheese mix.
- Whip cream and fold into cheese mix.
- Pour into crust and refrigerated several hrs or possibly overnight.
- May be frzn, sliced, then dipped in chocolate for better than a Dove bar treat!
