Chocolate Tiramisu Cake

  1. Prepare cake as directed for 2 9in round cake pans.
  2. Cool completely.
  3. (I have also made as a single layer in a 9x13 pan.
  4. ).
  5. While cake is cooling, in a small saucepan, combine sugar, instant coffee and water.
  6. Bring to boil over medium heat.
  7. Boil 1 minute.
  8. Remove from heat; stir in coffee liqueur.
  9. Cool completely.
  10. Brush flat side of each cake layer with coffee syrup until absorbed.
  11. Place cake(s) in freezer for 5 minutes.
  12. In a small bowl, combine Mascarpone cheese, whipping cream, powdered sugar and vanilla; beat at low speed until blended.
  13. Beat at medium speed unitl thickended, smooth and creamy consistency.
  14. Be careful not to over beat.
  15. Place 1 cake layer, round side down, on a serving plae.
  16. Top with half of cheese mixture.
  17. Place second layer, rounded side down, on top.
  18. Top with remaining cheese mixture.
  19. Top with siffed cocoa.
  20. Store in refrigerator.
