Salmon Chanchan-yaki

  1. Preheat the oven to 220C.
  2. Combine all the ingredients.
  3. Parboil and cut the potatoes.
  4. Slice the carrot into strips and the leek into 5 cm lengths.
  5. Cut off the root end of the mushrooms and shred.
  6. Spread out the foil and top with the salmon.
  7. Spread the miso on top, then assemble the vegetables.
  8. Wrap up with foil.
  9. Bake in an oven at 220C for 10-15 minutes.
  10. Cut the green onion into small pieces and scatter them over the food.
  11. Sprinkle on shichimi spice to taste.
