Mediterranean Orzo Salad
- 13 cup orzo pasta, uncooked
- 2 cups cherry tomatoes, cut in half
- 3 cups spinach, finely chopped
- 2 teaspoons olive oil
- 12 cup olive, cut in quarters
- 12 cup mozzarella cheese
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- salt
- pepper

- Prepare orzo to package directions, let cool.
- 2.
- Warm oil in frying pan, saute tomatoes and spinach until spinach is slightly wilted.
- Add salt and allow to cool.
- 3.
- Whisk olive oil, balsamic vinegar, salt and pepper.
- 4.
- Combine all ingredients and let sit at least 20 minutes.
