Pork And Rice Bake Recipe
- 3/4 c. long grain rice
- 1 (1 lb., 13 ounce.) can (3 1/2 c.) whole tomatoes
- 1/4 c. minced green pepper
- 1/2 teaspoon chili pwdr
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 5-6 pork chops, 1/2 inch thick
- 1 teaspoon salt
- 5-6 slices onion
- 5-6 green pepper rings
- Mix first six ingredients in a 13 x 9 x 2 inch baking dish (break large pcs of tomatoes).
- Arrange pork chops over top of rice mix.
- Sprinkle chops with salt, then top each with an onion and bell pepper.
- Cover tightly with foil.
- Bake at 325 degrees for 1 hour and 15 min.
- (Onions and pepper can be minced and added to rice instead of topping pork chops).
