*Turkey Enchiladas

  1. Combine turkey with sour cream, cheese and 1 teaspoon salt.
  2. Heat 13 cup oil and dip tortillas in until soft and drain.
  3. Stuff with turkey mix and roll.
  4. Arrange side-by-side with seam side down in shallow pan.
  5. Turkey Sauce: Rinse seeds from chillies and chop.
  6. Saute with garlic in oil.
  7. Add stewed tomatoes, onions, 1 teaspoon salt, oregano and water.
  8. Simmer uncovered until thick, about 1/2 hour.
  9. Pour chilli sauce over enchiladas and bake at 350F (180C) 20 to 30 minutes.
  10. Let set 5 to 10 minutes before serving.
