Gingery Cucumbers
- 2 medium-size Kirby cucumbers
- 1 teaspoon chopped or grated fresh or frozen ginger
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon sugar
- 1/4 teaspoon sesame oil
- Scrub and trim cucumbers, but do not peel.
- Slice thinly.
- Chop or grate ginger and place in serving bowl with vinegar, sugar and sesame oil.
- Stir in cucumbers.
