Feta, Tomato and Basil Grilled Cheese
- 8 slices Italian bread
- 12 cup olive oil
- 12 large fresh tomatoes, thinly sliced
- 12 cup chopped fresh basil
- 4 slices provolone cheese
- 12 cup crumbled feta
- Bush one side of each bread slice with olive oil.
- Place on work surface, oiled side down.
- Top 4 bread slices with tomatoes, basil, provolone and feta.
- Cover with remaining bread slices, oiled side up and press together.
- Cook in panini press 3-4 minutes or until cheese is melted.
