Melt in Your Mouth Pork in Kakuni-don (Simmered Pork Rice Bowl)
- 300 grams Pork block
- 2 Red chili pepper
- 1 clove Garlic
- 1 knob Ginger
- 2 1/2 cup Water
- 100 ml Sake
- 4 tbsp Soy sauce
- 2 tbsp Soy sauce
- 4 tbsp Sugar
- 1 and 1/2 tablespoons Katakuriko
- 3 tbsp Water
- Pound the pork lightly with the back of a knife.
- Heat the oil in a frying pan and cook the pork on both sides until golden brown.
- Transfer the pork into a saucepan with 3 cups of water (600 ml).
- Bring it to a boil over high heat.
- Add sake, garlic, ginger, and red chili pepper.
- Cover with a lid and simmer for 1 hour.
- Add 4 tablespoons of soy sauce and cover with the lid again.
- Simmer for 20 minutes over low heat.
- Then add 2 tablespoons of soy sauce and 4 tablespoons of sugar.
- Simmer for another 20 minutes.
- Remove the pork.
- Dissolve 1 tablespoon of katakuriko in 1/2 tablespoon of water.
- Pour into the sauce to thicken.
- Put the cooked rice in a serving bowl and place the pork on top.
- Pour the thickened sauce over the top and serve.
