Melt in Your Mouth Pork in Kakuni-don (Simmered Pork Rice Bowl)

  1. Pound the pork lightly with the back of a knife.
  2. Heat the oil in a frying pan and cook the pork on both sides until golden brown.
  3. Transfer the pork into a saucepan with 3 cups of water (600 ml).
  4. Bring it to a boil over high heat.
  5. Add sake, garlic, ginger, and red chili pepper.
  6. Cover with a lid and simmer for 1 hour.
  7. Add 4 tablespoons of soy sauce and cover with the lid again.
  8. Simmer for 20 minutes over low heat.
  9. Then add 2 tablespoons of soy sauce and 4 tablespoons of sugar.
  10. Simmer for another 20 minutes.
  11. Remove the pork.
  12. Dissolve 1 tablespoon of katakuriko in 1/2 tablespoon of water.
  13. Pour into the sauce to thicken.
  14. Put the cooked rice in a serving bowl and place the pork on top.
  15. Pour the thickened sauce over the top and serve.
