Aubergine With Tomatoes Recipe
- 2 x Thin slices Aubergine (50gm)
- 2 tsp Butter (10gm)
- 1/4 c. Canned tomatoes (50 gm)
- 1/2 tsp Chives, minced (2gm) Salt and pepper to taste
- Brown the aubergine in butter.
- Add in salt and pepper.
- Heat tomatoes in a separate pan and pour over aubergine.
- Sprinkle with minced chives.
