Aubergine With Tomatoes Recipe

• 2 x Thin slices Aubergine (50gm)
• 2 tsp Butter (10gm)
• 1/4 c. Canned tomatoes (50 gm)
• 1/2 tsp Chives, minced (2gm) Salt and pepper to taste

1. Brown the aubergine in butter.
2. Add in salt and pepper.
3. Heat tomatoes in a separate pan and pour over aubergine.
4. Sprinkle with minced chives.
