Broccoli-Mango-Rice Bake
- 1 cup Cold Water
- 2 cups Low Sodium Vegetable Stock
- 1 head Fresh Broccoli, Cut Into Large Pieces
- 1 whole Mango, Cubed
- 1/2 whole White Or Yellow Onion, Diced
- 1- 1/4 teaspoon Black Pepper
- 1 teaspoon Salt
- 2 Tablespoons Sweet Cream Butter, Melted
- 2 Tablespoons Pure Honey
- 1 cup Uncooked Brown (or White) Rice
- Preheat oven to 400 degrees F.
- In a nonstick 9 X 12 baking dish, add water and vegetable stock.
- Stir to mix.
- Set aside.
- In a large mixing bowl, add broccoli pieces, mango cubes, onion, black pepper, salt, butter and honey Stir well to combine.
- Add rice (of your choice) and stir mixture well.
- Transfer to the baking dish and cover with aluminum foil.
- Place in the oven on the middle rack.
- Bake 25 minutes covered, then remove foil and bake an additional 5 minutes, for a total bake time of 30 minutes.
- Serve and enjoy.
