Asian Inspired Shrimp and Pineapple
- 1 pound Shrimp, Shelled And Deviened
- 3 Tablespoons Soy Sauce, Lite Or Low Sodium
- 1/4 cups Honey
- 1 Tablespoon Finely Chopped Cilantro
- 2 whole Jalapenos
- 4 cloves Garlic
- 1 Tablespoon Grated Ginger
- 1/2 cans (20 Oz. Can) Pineapple, Chunks
- Notes: I used a package of frozen raw shrimp and about half a large can of pineapple chunks.
- I normally buy the larger shrimp, but the smaller ones were on sale.
- If you have the funds for fresh, thats always better.
- I also scooped out all the seeds from the jalapenos but it took away a lot of the spice.
- If you are more daring than me, put it all in there.
- Mix all the ingredients together (except the pineapple) in a large bowl with the shrimp.
- Add to a skillet over medium to low heat.
- Cook the shrimp until they just turn pink.
- Then add the pineapple and simmer for another minute or two.
- Dont overcook the shrimp or they will be tough and rubbery.
- It tasted really yummy on some brown rice but I could also see putting them on skewers and throwing them on the grill!
