Fresh crab cakes
- 3 can Special crab meat
- 3 eggs
- 5 green onion, minced
- 1/2 bunch chopped parsley
- 1 zest and juice of half lemon
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper
- 1/2 cup heavy cream
- 1 tbsp salt
- 2 tsp ground black pepper
- 1 cup red onions, fine diced
- 1 cup green bell pepper, fine dice
- 1 panko to bind
- Sweat onions and bell pepper until soft
- Add crab meat, eggs, green onions, parsley, lemon juice, zest, cumin, cayenne pepper, salt and blk pepper to bowl
- Add cream and about 2 cup of panko until cakes are dry enough to mold
- Portion at 2.5oz and mold into 2" tall cylinders
