Fall Asian Pork & Pumpkin Soup

  1. Add pumpkin, mushroom, peas, and onion to large pot on high heat for about 15 mins.
  2. Stirring every 5 mins.
  3. To pot, add both Thai ginger stock and chicken stock.
  4. Bring to a boil for about 10 mins.
  5. Add cubed pork chop and garlic powder.
  6. Stir.
  7. Let simmer for about 10 mins.
  8. While pot is simmering, chop scallion stalk into 1/5 pieces, add cilantro, and add to pot.
  9. Once pot has simmered for about 10 mins, turn off heat and add coconut milk.
  10. Stir.
  11. Enjoy!
  12. Salt and pepper to taste
