Perfect Lemon Meringue Pie Recipe

  1. In saucepan, mix first 4 ingredients; gradually adding the warm water, stirrin constantly.
  2. Cook and stir till boiling.
  3. Reduce heat and cook and stir for 2 min.
  4. Stir small amount of warm mix into slightly beaten egg yolks.
  5. Return to warm mix and bring to a boil.
  6. Cook and stir constantly for 2 min.
  7. Add in butter, juice and peel.
  8. Pour into pie shell.
  9. Meringue: Beat 3 egg whites with 1/2 tsp.
  10. vanilla and 1/4 tsp.
  11. cream of tartar till soft peaks form.
  12. Gradually add in 6 Tbsp.
  13. sugar, beating till stiff peaks form and all sugar is dissolved.
  14. Spread on filling, sealing to edge of pastry.
  15. Bake for 12 to 15 min at 350 degrees.
