Pumpkin Pie II
- 1 1/2 cups pumpkin
- 3/4 cup white sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 3 eggs, lightly beaten
- 1 1/4 cups milk
- 2/3 cup evaporated milk
- 1 recipe unbaked 9 inch pie crust
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, mix together the pumpkin, sugar, salt, cinnamon, ginger, cloves and nutmeg.
- Blend in the eggs, milk and evaporated milk.
- Pour the mixture into the pie crust.
- Bake in the preheated oven 50 minutes, or until a knife inserted in the center comes out clean.
- Cool on a metal rack before serving.
