Heidi's Quesadillas
- 1 brown onion, diced
- 1/2 green capsicum, diced
- 1/2 bbq chicken, shredded
- 1/2 block cream cheese
- 4 tbsp sour cream
- 1 jar tomato salsa
- 1/2 bunch coriander, chopped
- 1 grated cheese as needed
- 1 packages tortillas, i used sundried tomato basil
- Drizzle some olive oil in a frying pan and cook onion and capsicum until softened
- Add the creamed cheese and melt down and then add chicken, sour cream, salsa and coriander until warmed through
- Place a tortilla on a plate and top half with chicken mixture, topping with a small handful of cheese
- Fold tortilla over and place in sandwich press (don't push down the lid too hard or the mixture will spill out).
- Once it's slightly crispy and browned, lift off and slice into thirds
- Repeat until you have as much as needed.
- Serve and enjoy.
- I serve this with Mexican rice and a side of marinated chilli mix found in the deli at Coles
