Garlic Pork Frisee Salad with Apple Croutons

  1. In a saute pan coated with oil, caramelize garlic and ginger.
  2. Add remaining oil and heat.
  3. In a stainless steel bowl: mix scallions, vinegar, sugar and pork.
  4. Add hot oil and thoroughly mix.
  5. Add frisee salad and toss.
  6. Plate and garnish with apple croutons.
  7. In a small bowl, mash the apples and butter together.
  8. Spread on croutons and garnish with chives.
