Mussels in Tomato Sauce

  1. Heat oil over medium heat in a large skillet.
  2. Add garlic and red pepper flakes, cook and stir 1 minute.
  3. Add wine; simmer.
  4. 3 minutes.
  5. Add tomatos, salt, and pepper.
  6. Cook 1 minute.
  7. Add mussels.
  8. Stir to combine.
  9. Cover skillet, cook 4 minutes, just until shells open.
  10. Immediately stir in arugula and serve.
