Sausage and Kraut Casserole

  1. Preheat oven to 400 degrees.
  2. Drain sauerkraut.
  3. Spread sauerkraut in a 9x13 glass baking dish.
  4. Slice sausage in half lengthwise, then into 1/2-inch pieces.
  5. (You can slice the sausage however you like, really, but I prefer smaller bites.)
  6. Spread sausage over the sauerkraut and stir gently to mix together.
  7. Spread cheese evenly over the kraut/sausage mix.
  8. Sprinkle bread crumbs evenly over the cheese.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake for 10 more minutes.
  11. Remove from the oven and let sit for about 5 minutes before serving.
  12. Best served with mashed potatoes and corn.
  13. We like to put the potatoes on the plate, then the corn, then the casserole on top, but if youre not a mixer, you can eat it however you like.
