Zucchini Stir Fry
- 18 cup oil
- 4 cups zucchini, unpeeled and thinly sliced
- 1 cup carrot, thinly sliced
- 1 cup onion, thinly sliced
- 34 cup finely chopped celery
- 4 ounces mushrooms, sliced
- 12 cup green pepper, Thinly Sliced
- 2 medium tomatoes, Cut into Wedges
- 12 teaspoon garlic salt
- 14 teaspoon basil
- 1 dash fresh pepper
- 13 cup taco sauce
- 2 teaspoons prepared yellow mustard
- Toss all vegetables to mix in oil in a large skillet.
- Cook, covered, over medium heat until half cooked.
- Stir Occasionally; should take about 10 minutes.
- In small bowl Combine Garlic Salt, Basil, Pepper, Taco Sauce, and Mustard.
- Stir the mixture into the vegetables.
- Cook, Uncovered, about 10 minutes.
- Enjoy.
