Rum, Apple and Pear Crisp
- 2 cooking apples, peeled and thinly sliced
- 2 firm ripe pears, peeled and thinly sliced
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 12 teaspoon apple pie spice
- 12 teaspoon ginger
- 1 12 teaspoons imitation rum extract
- 6 tablespoons butter, softened
- 12 cup flour
- 12 cup light brown sugar, packed
- 1 teaspoon apple pie spice
- 12 cup quick-cooking oats
- Preheat oven to 350F Grease 9-inch deep-dish pie plate or 11x7-inch baking dish.
- FOR THE FILLING: Toss apple and pear slices with cornstarch.
- Mix lemon juice, apple pie spice, ginger and rum extract; toss with fruit.
- Spoon into prepared dish.
- FOR THE STREUSEL TOPPING; Mix all ingredients until crumbly.
- Sprinkle over fruit.
- Bake 40-45 minutes or until fruit is tender and topping is golden brown, Serve warm with ice cream or whipped cream, if desired.
