Tomato Gravy
- 10 oz petite stewed tomatoes
- 5 thick slices bacon
- 4 tbsp flour
- 12 oz vegatable stock or water
- over medium high heat
- chop bacon into small peices and fry till crispy
- slowly add flour one tablspoon at a time.. stirring constantly
- *do not let flour brown
- when flour is absorbed add tomatoes and continue stirring
- as it thickens add broth/water slowly(about 3 ounces at a time) still a stirring constantly
- turn down and simmer stirring occasionally...untill it reaches the consistency of gravy
- that's it your done....
- serve over rice...potatoes or use as a sauce for meat
