Banana Chocolate Chip Muffins
- 12 cup brown sugar
- 12 cup white sugar
- 12 cup Earth Balance margarine
- 3 mashed bananas
- 1 teaspoon vanilla
- 14 cup rice milk
- 1 teaspoon cider vinegar
- 2 cups spelt flour
- 12 teaspoon baking soda
- 1 teaspoon cinnamon
- 14 teaspoon allspice
- 12 teaspoon salt
- 34 cup non-dairy chocolate chips (PC Decadent Semi-sweet Chocolate Chips)
- Preheat oven at 350F.
- Spray muffin tins or line with paper cups.
- In a large bowl sift flour, baking soda, salt and spices together.
- Add Cider vinegar to milk and let stand.
- In another bowl, cream together margarine and sugar.
- Add mashed bananas, milk and vanilla.
- Add all the wet ingredients to the dry and mix well.
- Fold in chocolate chips.
- Pour mixture into muffin tin.
- Bake for 15-20 minutes.
