Brown Rice
- 3 garlic cloves, finely chopped
- 2 small shallots or 2 small yellow onions, finely chopped
- 1 cup brown rice
- 2 tablespoons light margarine
- 1 12 cups of boiling chicken broth (use a low sodium or no sodium brand if possible)
- 12 teaspoon Mrs. Dash table blend seasoning
- In a small pan, boil broth or water.
- Meanwhile, in a sauce pot with a fitted lid, melt margarine over medium heat.
- Add the garlic and shallot or onion and saute for 2-3 minutes.
- Add the rice and stir to toast alittle.
- Stir in the boiling liquid you have chosen.
- Add the seasoning and bay leave.
- Stir to combine, raise heat to high and bring to a boil.
- Reduce the heat to low and cook rice for 45 minutes to 1 hour OR until all liquid has evaporated.
- Remove the pan from heat and let sit for 10 minutes.
- Flake with a fork.
