Thomas Family Baked Coconut Shrimp With Pina Colada Dip
- 1 lb large raw shrimp
- 13 cup cornstarch
- 2 egg whites, lightly beaten
- 1 cup sweetened flaked coconut
- 1 cup panko breadcrumbs
- 1 teaspoon onion powder
- salt and pepper
- 12 teaspoon garlic powder
- nonstick cooking spray
- 12 cup yogurt, vanilla or 12 cup sour cream
- 12 cup frozen Pina Colada mix
- pre-heat oven 500 degrees.
- make a batch of pina coladas, pour yourself some and turn on jimmy buffet.
- combine the yogurt/sourcream and pina colada and chill for serving.
- put coconut flakes and panko in a large storage bag.
- dredge shrimp in cornstarch ( shake off excess before next step).
- dip shrimp in egg whites.
- toss in the coconut/panko bag ( give a little shake with each one so it gets coated before you throw the next one in)
- I usually do 1/2 batch first and remove them from coconut/panko bag and then do the rest).
- spray baking sheet liberally with non- stick spray.
- place shrimp on sheet and spray again,liberally.
- bake each side for 7-10 minutes.
- serve with pina colada sauce -- and another drink!
