Double Chocolate Cake
- 12 cup virgin coconut oil
- 1 14 cups sugar
- 2 eggs, beaten
- 1 cup light coconut milk
- 12 cup cocoa
- 1 12 cups all-purpose flour
- 12 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup chocolate chips
- Preheat oven to 350.
- Beat together coconut oil and sugar until well blended.
- (You may need to warm oil slightly, depending on the kitchen temperature.
- It should be a soft solid.

- Beat in eggs.
- Heat coconut milk until hot, but not boiling.
- It's easiest to do this in the microwave.
- Pour hot coconut milk slowly into the cocoa while mixing.
- Mix salt, baking powder, baking soda and half of flour into the batter.
- Mix in half of the cocoa liquid, the remaining flour and then the rest of the cocoa liquid.
- Mix in vanilla and chocolate chips.
- Pour into 9 inch greased or Pam'd square pan.
- Bake at 350 for 40 min or until center bounces back slightly when pressed.
