Red Beans & Rice

  1. Saute onion, bell pepper, celery, garlic, and smoked sausage in a large pot until onions are soft.
  2. Open cans of beans, drain two.
  3. Leave the third un-drained.
  4. Add the rest of the ingredients, and simmer for 30 minutes while you cook the rice.
  5. Serve over hot cooked rice.
