Potato Florentine Casserole
- 1 (16 ounce) package Simply Potatoes Shredded Hash Browns
- 34 cup butter, melted
- 34 cup bacon (fried crispy brown and crumbled)
- 12 cup green onion, chopped
- 1 (10 ounce) package frozen spinach (thawed and drained)
- 1 (15 ounce) jar alfredo sauce
- 1 cup goat cheese
- 2 cups corn flakes
- parsley (optional)
- Combine potatoes, 1/2 cup butter, Spinach, crispy crumble bacon, green onion, Alfredo sauce and crumbled goat cheese; stir well.
- Spoon into greased 2 1/2 quart casserole.
- Crunch cereal and stir in remaining butter Sprinkle over potato mixture.
- Bake at 350 degrees for 50 minutes.
- Garnish parsley.
