Meat Ball Vegetable Salad Recipe
- 3/4 pound grnd beef
- 1/2 teaspoon each garlic salt, seasoned pepper
- 1/4 c. oil
- 1/2 pound zucchini, thinly sliced
- 1/4 c. cider vinegar
- 1 clove garlic, chopped
- 6 c. coarsely minced lettuce
- 1 lg. tomato, cut into wedges
- 3/4 c. onion rings
- Combine grnd beef, garlic salt and seasoned pepper in bowl, mixing well.
- Shape into 24 small balls.
- Brown in oil in skillet.
- Remove meatballs.
- Cook next three ingredients in pan drippings till slightly heated.
- Pour over meat balls in bowl.
- Refrigeratein refrigerator, stirring occasionally.
- Combine with lettuce, tomato and onion rings in salad bowl, tossing lightly.
