Tzatziki
- 12 cucumber
- 200 g Greek yogurt
- 4 tablespoons chopped of fresh mint
- 2 garlic cloves, crushed
- 12 teaspoon dried oregano
- 1 teaspoon caster sugar
- 1 lime, juice of
- salt & freshly ground black pepper
- Grate the cucumber into a sieve set over a bowl, or finely dice.
- Try to avoid using the central seeded core as it is very watery.
- Squeeze out any excess water by pressing the cucumber down into the sieve and transfer to a bowl.
- Add the yogurt, garlic, mint, oregano, caster sugar and lime juice.
- Season to taste and chill until ready to use.
- Garnish with a sprig of mint and serve with olices and pitta bread.
