Avocado/Potatoe Stuffed Portabella Mushrooms #5FIX
- 1 (8 ounce) package Simply Potatoes Traditional Mashed Potatoes
- 1 large avocado
- 4 large portabella mushrooms
- 2 12 teaspoons olive oil mayonnaise
- 4 ounces asiago cheese, shredded
- Preheat oven to 375 degrees.
- Clean mushrooms, remove stems and dice.
- Brush 1/2 teaspoon mayonnaise on mushroom tops.
- Bake mushroom caps face down in shallow greased dish for 15 minutes.
- Prepare mashed potatoes using instructions on package.
- Peel and mash avocado with 2 teaspoons of mayonnaise and diced stems.
- Spoon mashed potatoes into baked mushroom, making hole in center.
- Spoon avocado mixture in center of potatoes.
- Top mushrooms with shredded cheese.
- Bake until bubbly about 10 minutes.
