The Dietitian Who Loves Chocolate Chip Cookies
- 12 cup butter
- 12 cup canola margarine
- 23 cup sugar
- 23 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 13 cups whole wheat flour
- 1 cup almond meal
- 1 teaspoon baking soda
- 14 teaspoon salt
- 2 cups whole oats
- 1 cup walnuts
- 1 12 cups dark chocolate chips
- In a mixer, beat together the butter, Earth Balance, and sugars.
- Add two eggs and vanilla and beat until smooth and creamy.
- In a separate bowl, mix together the flour, almond meal, baking soda and salt.
- Slowly add to the butter mixture until combined.
- Stir in the oats, walnuts, and chocolate chips until just combined-- do not overmix.
- Spoon onto cookie sheet 2" apart.
- Bake at 350 for 12-18 minutes depending on desired crispyness.
- **Rather than baking all the cookies at once, I recommend rolling the dough up into a "log shape" using seran wrap and freezing it.
- Not only does that allow you to bake a few any time you want fresh, hot cookies, but it also lets you cut the log into discs for thin crispy cookies (I cut them about 1/4" thick).
