The Dietitian Who Loves Chocolate Chip Cookies

  1. In a mixer, beat together the butter, Earth Balance, and sugars.
  2. Add two eggs and vanilla and beat until smooth and creamy.
  3. In a separate bowl, mix together the flour, almond meal, baking soda and salt.
  4. Slowly add to the butter mixture until combined.
  5. Stir in the oats, walnuts, and chocolate chips until just combined-- do not overmix.
  6. Spoon onto cookie sheet 2" apart.
  7. Bake at 350 for 12-18 minutes depending on desired crispyness.
  8. **Rather than baking all the cookies at once, I recommend rolling the dough up into a "log shape" using seran wrap and freezing it.
  9. Not only does that allow you to bake a few any time you want fresh, hot cookies, but it also lets you cut the log into discs for thin crispy cookies (I cut them about 1/4" thick).
