Pancakes to Make the World Go Round
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla sugar
- 5 cups kefir
- 2 large eggs
- 2 tablespoons lemon juice
- 4 tablespoons melted butter
- Combine the dry ingredients in a big baking bowl.
- Melt butter in a non-stick skillet, and mix all the wet ingredients together in another bowl.
- Make a well in the middle of the flour-mixture, and pour in the liquid ingredients.
- Whisk together until well combined, but be careful not to over-mix.
- The batter should still be a little bit lumpy.
- Let stand on the countertop for at least 15 minutes.
- Re-heat the same pan you used to melt butter.
- The pancakes actually get prettier if you dont use an exaggerated amount of butter when cooking, so for once, keep clear of the fat.
- Pour approximately 1/4-1/3 cup of batter into the pan, and cook the pancake for 1-2 minutes, until bubbly on top.
- Flip, and cook an additional minute on the other side.
- Continue with the rest of the pancakes, and serve warm with syrup of your liking.
- This recipe yields approximately 14 5-inch-pancakes and serves a family of four.
