Veal Stew With Dumplings Recipe
- 2 pound veal stew meat (1" cubes)
- Flour
- 1/4 c. extra virgin olive oil
- 1 teaspoon paprika
- 1 teaspoon thyme
- 2 c. chicken broth
- 1 c. dry white wine
- 12 white onions, peeled
- 4 carrots, peeled & sliced
- 2 stalks celery, sliced
- 2 teaspoon salt
- Dust veal with flour.
- Heat oil in heavy skillet.
- Add in veal and brown on all sides (10 min).
- Sprinkle with paprika and thyme.
- Add in chicken broth and dry white wine.
- Cover and simmer gently for 40 min.
- Add in vegetables and salt and simmer for 15 min.
- Meanwhile, in a bowl, sift flour, salt and baking pwdr; blend in shortening.
- Add in lowfat milk all at once, stirring just sufficient to moisten dry ingredients.
- Drop by large spoonfuls over stew.
- Cover and simmer 20 min.
- Serve immediately.
