Parkin Drops
- 1 cup dark corn syrup
- 13 cup butter
- 13 cup packed brown sugar
- 3 tablespoons milk
- 2 cups rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- Preheat oven to 350 degrees farenheit.
- Grease and flour 3 large baking sheets.
- In a medium saucepan over medium heat, stir corn syrup and butter until butter melts.
- Remove from heat.
- Stir in brown sugar and milk; set aside for 10 minutes.
- In a large bowl, combine ots, flour, baking powder and ginger.
- Stir in syrup mixture.
- Drop dough by rounded teaspoons, 2 inches apart, on prepared baking sheets.
- Bake 9 to 13 minutes, or until deep golden brown.
- Cool on racks.
- Store in airtight container at room temperature for up to 1 week or freeze for longer storage.
