Parkin Drops

  1. Preheat oven to 350 degrees farenheit.
  2. Grease and flour 3 large baking sheets.
  3. In a medium saucepan over medium heat, stir corn syrup and butter until butter melts.
  4. Remove from heat.
  5. Stir in brown sugar and milk; set aside for 10 minutes.
  6. In a large bowl, combine ots, flour, baking powder and ginger.
  7. Stir in syrup mixture.
  8. Drop dough by rounded teaspoons, 2 inches apart, on prepared baking sheets.
  9. Bake 9 to 13 minutes, or until deep golden brown.
  10. Cool on racks.
  11. Store in airtight container at room temperature for up to 1 week or freeze for longer storage.
