AMIEs Pear, Radicchio & Walnut Salad
- 3 tbsp extra-virgin olive oil
- 2 tbsp lemon juice
- 2 tbsp balsamic venigar
- 1 salt and freshly ground black pepper
- 4 head radicchio
- 2 pears, quartered, cored and thinly sliced
- 1/3 cup walnut halves, lightly toasted
- Whisk the oil and lemon juice together in a small bowl.
- Season with salt and pepper.
- Remove and discard the outer leaves of the radicchio.
- Roughly tear the remaining leaves and place in a medium bowl.
- Add the pear and walnuts.
- Pour the dressing, add balsamic vinegar and toss to combine.
