Sweet And Sour Chicken(Microwave)
- 1 (3 to 3 1/2 lb.) cut up frying chicken
- 1 Tbsp. melted butter
- 1/2 tsp. salt
- dash of black pepper
- dash of ground ginger
- 3 c. diced celery
- 1 (8 oz.) can pineapple chunks (use the juice, too)
- 2 Tbsp. brown sugar
- 3 Tbsp. water
- 1 1/2 Tbsp. soy sauce
- 1 Tbsp. cider or red wine vinegar
- 1 Tbsp. cornstarch
- 1 red pepper, thinly sliced
- Place chicken in microwave dish.
- Pour melted butter over chicken.
- Sprinkle with salt, pepper and ginger.
- Top with celery. Cover with waxed paper.
- Microwave on High 16 minutes, turning dish once.
- Mix pineapple juice with brown sugar, water, soy sauce, vinegar and cornstarch in microwave measuring cup. Microwave on High for 3 minutes, until mixture thickens, stirring once.
- Pour mixture over chicken.
- Add the pineapple chunks and red pepper.
- Cover with waxed paper.
- Microwave on High for another 6 to 8 minutes, until chicken is tender and juices run clear when chicken is pierced with fork.
- Serve over rice or noodles.
